Going into its 10th year, VegFest offers something fun for everyone. There are great speakers, hands-on food demonstrations, an animal haven, live music, and they even have a "veggie kids zone." This year's event will be held on Saturday, October 24, at Orlando Festival Park from 10 am to 6 pm. In this video, I do lots of eating! Baked Oatmeal Combine 1/2 cup oats, 1 mashed banana, cinnamon (optional), 1 tsp baking powder, and 1/2 cup almond milk. Place in a mini ramekin or other oven safe dish and bake for 25 minutes at 350F. Add any desired toppings, my favourites are strawberries and peanut butter with almond milk. 3. Lettuce Wraps Take a piece of Romaine Lettuce (or any lettuce with a large, flexible leaf) and fill it with brown rice/quinoa, smoked tofu/veggie beef cooked in hoisin sauce, sautéed bell peppers/carrots/zucchini/or any vegetables, sautéed onions and mushrooms, avocado and salsa, nutritional yeast or vegan cheese, hot sauce, and anything else of your choice. 2. Avo-Tomato Sandwich On two slices of bread/bagel, spread 1/2 a mashed avocado, a sprinkle of nutritional yeast and add some tomato slices. Optional things I like to add are spinach/lettuce, alfalfa sprouts, and ground flax seeds. 3. Quinoa Watermelon Salad http://www.annies-eats.com/2012/06/20/quinoa-salad-with-watermelon-and-feta/ ----- DINNER ----- 1. Spaghetti and "Meat" Balls Boil spaghetti pasta according to package instructions and set aside. In a pot, steam chopped broccoli until tender. Saute mushrooms, onions, and any other desired vegetables until cooked. Separately bake/saute bought "meat" balls. Optionally, you can bring saute all of this together in a large skillet with the tomato sauce to make a more uniform "meat" sauce, or it can just be dished into a bowl with the spaghetti with sauce over top. 2. Pesto Pasta In a dry skillet over medium-high heat, toast 1/2 cup of pine nuts until golden brown. Set aside. In a food processor, process two bunches of cilantro and 4 cloves of garlic. Once mixed, add in your toasted pine nuts, 1 tsp salt, 1 tsp black pepper, 1 tbsp lemon juice, optional smoked paprika, and process until smooth. If it's too dry, add in some olive oil or water until it reaches your desired consistency. I love putting this over pasta (whole wheat, rice or zoodles) with avocado and nutritional yeast. 3. Veggie Burgers Prepare patty's according to package instructions, or make your own (http://minimalistbaker.com/easy-grillable-veggie-burgers/) I like to eat mine on a toasted whole wheat bun with hummus, avocado, tomato, any other veggies (spinach, lettuce, sprouts, mushrooms, etc), and nutritional yeast for a cheesy flavor. 4. Spring Rolls Prepare angel hair or fettuccine rice noodles as per package instructions. Chop up bell pepper, cilantro, avocado, cucumber, mushrooms, smoked tofu, bean shoots, and shred some carrots. Soak your rice paper wrap in lukewarm water for about 10 seconds until soft, then fill with any fillings of your choice. Dip into peanut sauce. Peanut Sauce Recipe: In a food processor, process 1/2 cup peanut butter, 1 tablespoon minced garlic, 1/4 cup tamari (soy sauce), 1/4 cup water, 1 tablespoon rice vinegar, 1 teaspoon hot sauce, 1 teaspoon sugar or other natural sweetener until smooth. Chickpea Omelet Blend or hand mix 2/3 cup water, 1/3 cup chickpea flour, 1 tbsp ground flax seed, 1 tbsp nutritional yeast, 1/8 tsp turmeric, 1/2 tsp baking powder, 1/2 tsp garlic powder, salt and pepper to taste. Pour it over a greased skillet over medium-high heat. Let it cook like you would a normal omelet, flipping when the edges are firm and there are bubbles. Once the other side is cooked, put it on a plate and fold over any fillings. I fill it with sauteed veggies (mushrooms, spinach, bell pepper and zucchini) and sprinkle on nutritional yeast.

Such a highly requested video! These are some things I make myself on an average day/week. Let me know if you like videos like this and want me to do more! ♥ Thanks for watching! ♥ Focaccia Bread Recipe (makes 2): Ingredients: 1/2 tsp superfine sugar 2 tsp dried yeast or 1/2 oz fresh yeast 3 C lukewarm water 2 lbs all-purpose flour 2 tsp salt 3 Tbs olive oil cornmeal Directions: Put the sugar & yeast in a small bowl & stir in 1/4C of the water. Leave in a draft-free spot to activate. If it doesn't bubble & foam in 5 minutes, throw away and start again. Mix the flour & salt in a bowl. Add 2 Tbs of the olive oil, the yeast mixture, and 3/4 of the remaining water. Mix, then add the rest of the water, a little at a time, until the dough loosely clumps together. Transfer to a lightly floured surface and knead for 8 minutes until smooth, or until the impression of a finger springs back immediately. Rub the inside of a large bowl with the remaining olive oil. Roll the ball of dough around in the bowl to coat it, then cut a shallow cross on the top of the ball with a knife. Cover the bowl with plastic wrap and leave it in a draft-free, warm spot for 1-1.5 hours until doubled in size. Punch down the dough to its original size, then divide in two portions. Roll our each portion of dough to an 11x8 rectangle, then use the heels of your hands, working from the center out, to make a 15x11 inch rectangle. Lightly grease 2 baking sheets and dust with cornmeal. Put a portion of dough in the center of each baking sheet and press out to fill the sheet. Cover with plastic wrap and leave in a draft-free spot for 2 hours to rise again. Bake for 20 minutes at 425 degrees F. AUTHENTIC TUSCAN SOUP RECIPE (aka what we call "Mary's Soup"): Ingredients: 16 oz veggie broth 28 oz can of whole tomatoes (with juice) 1 can cannelloni beans, drained, rinsed 1 onion, chopped 2 leaks, whites only, chopped 2 zucchini, chopped 2-4 cloves garlic, chopped 2 stalks celery, chopped 2 potatoes, diced 2 carrots, peeled and chopped Salt, pepper, season to taste (I like rosemary, thyme, basil as well) Directions: Boil potatoes, zucchini, tomatoes (with liquid), carrots, & beans with the broth until potatoes are tender. Sauté onion, leeks, celery, and garlic in olive oil until translucent. Add to pot with broth and simmer for 30-60 min. Let cool for 30 min & blend in a blender or use a stick blender until smooth. Season to taste, reheat, and serve with homemade focaccia bread croutons! In a world of FDA regulation and GMOs, you never know what the hell is inside your food. A disgusting amount of chemicals and additives go into processed foods. The worst part is, many are LEGALLY allowed to go unlabelled. In the last few years of cutting out animal products from my diet, I've slowly learned about foods that I was still eating that actually weren't vegetarian! I felt so blindsided and grossed out, so hopefully this can help enlighten you to some very unsafe and disgusting ingredients that are being added to common foods (sometimes without our knowledge!). Whether you are vegetarian or not, these are things you reallllllly don't want to be consuming...trust me. Here are some shocking foods that seem safe and meat free, but actually contain animal products! It is super important for vegetarians (or anyone that cares about their health) to know what to look for in their foods. These ones snuck up on me for far too long! -Marshmallows: contain GELATIN aka animal bones and ligaments -Veggie Soups: usually based in BEEF and CHICKEN broths -Refried beans: LARD (or animal fat) is often added for flavour -Cheese: RENNET, the stomach lining of slaughtered calves, is used for processing -Red candies and foods: E120, also known as CARMINE, carminic acid or natural red #4, is extracted from the ground-up shell of the female cochineal insect. Cochineal can be found in food coloring, jellies, lollypops, strawberry milk flavoring, strawberry flavored yogurts, and many other red colored foods. Cochineal is also used to color lipsticks, clothing and pill coatings. -Gummy candies: contain GELATIN and RED DYE -White sugar: often refined and bleached through charred cattle BONES..yum! -Yogurt: some brands contain GELATIN and FISH OIL -Natural vanilla flavor: made from beaver butt juice, called CASTOREUM..use it to mark their territory and its FDA approved to be unlisted.. -Orange Juice: some brands add fish oil (OMEGA 3S) and LANOLIN (sheeps wool ) for vitamin d -Bananas: sprayed with shellfish derivative to preserve called CHITOSAN -Bagels and breads: L CYSTEINE- dough conditioner made from goose and duck feathers, and sometimes human hair -Hard coated candies- SHELLAC from bug juice to make outer coating -Beer and wine: clarified using ISINGLASS, which is a gelatin from fish bladders; Guiness is one brand to look out for! -Worcestershire Sauce- ANCHOVIES, check all condiments! *Capitalized names of ingredients to look out for!
